We had this one for lunch today, but the cabbage was a bit much to chew through. Looking at the picture, the greens look much leafier, so I might give it another go with a spinach base instead.

Hey Samantha! Totally get what you mean about the cabbage - it's all in the prep here. If you try cutting it with a veg peeler you should get a super fine shred that's easier to eat. But spinach could work well here too, the salad just won't last as long. Those leafy greens are the basil leaves btw :) x

Try running the cabbage through a box grater, it's quicker than a peeler but a different texture.
