Smoky Chipotle Chilli
The trick to bags of flavour in this chilli is blackening the onion and garlic for the chipotle sauce. It adds a smoky depth which complements the chipotle. Ideal for batch cooking, you could even double the quantities of this chipotle chilli con carne and then keep portions in the freezer - ideal for when you need an instant Mexican-inspired meal to hand. I made it with beef the first time but with quorn mince the second time as was catering for a veggie - just as good with quorn, such a fab recipe!
