Before you begin, make the Beef Chilli Con Carne.
Step 1.
Preheat your grill to high and reheat your leftover Beef Chilli Con Carne in a saucepan over a medium heat.
Step 2.
Chop the tomatoes and avocado into 1cm chunks and grate the cheddar. Lightly season the tomatoes with salt and set aside.
Step 3.
Add the tortilla crisps onto a large baking tray. Dollop the warm chilli all over it and top with grated cheddar cheese. Place under the grill until the cheese has melted, 4-8 mins (every grill is different, some might take longer, some might need less time.)
Step 4.
Once melted, top with the soured cream, avocado chunks, tomatoes and tear over some fresh coriander and tuck in!
