Step 1.
Make the Spicy Pork Ragù batch recipe.
Step 2.
Bring a large saucepan of salted water to the boil.
Tip in the rigatoni and cook according to pack instructions until al dente.
Step 3.
While the pasta cooks, warm the pork ragù in a separate saucepan over a low heat. Add a splash of water if it’s looking thick.
Step 4.
Once the pasta’s ready, reserve a mugful of the pasta water, then drain.
Tip the pasta into the ragù pan and toss everything together over a medium heat until glossy and piping hot. Add a splash of pasta water to loosen, if needed.
Step 5.
Grate the Parmesan and stir through most of it into the ragú. Then squeeze in the juice of the lime. Season with salt and black pepper to taste.
Step 6.
Divide between bowls, then finish with the remaining Parmesan and a drizzle of olive oil.
