Step 1.
Make the Juicy Pulled Chipotle Chicken.
Step 2.
Trim and peel the pineapple, then finely dice it. Finely dice the red onion and add both to a bowl with the juice of half the limes. For a spicier salsa, finely chop the Scotch bonnet. If you prefer it mild, just halve the chilli and let it infuse. Stir the chilli through the pineapple mix and set aside.
Step 3.
Warm the pulled chipotle chicken in a saucepan over a low heat until piping hot. Toast the tortillas in a dry frying pan for 20–30 seconds on each side until warm and flexible.
Step 4.
Pick the coriander leaves and discard the stalks.
Step 5.
Lay out the tortillas and load them up with the hot chipotle chicken, spoonfuls of pineapple salsa and a scattering of fresh coriander. Serve with lime wedges on the side.
