Homemade Mexican-Style Chorizo

Step 1.

Finely mince the garlic.

Step 2.

In a pan, toast the fennel seeds, then crush them in a pestle and mortar.

Step 3.

Combine all your spices, garlic and fennel seeds in a large bowl. Use your hands to mix in your pork and vinegar.

Step 4.

Refrigerate the ingredients for 48 hours.

Step 5.

Divide the mixture into 100 gram portions and then refrigerate or freeze as you wish. Then use them to form part of a recipe like MOB's very own Chorizo Carbonara.

If you want a leaner chorizo, don’t add the pork fat, which can be bought from any butcher.

1/2 Tbsp Ancho Chilli Flakes

1 Tsp Oregano
1 Tsp Thyme
1 Tsp Cumin
