Step 1.
Make the Beef Chilli Con Carne.
Step 2.
Heat the oven to 200°C.
Step 3.
In a bowl, mix the ricotta with half the grated cheddar and a good pinch of salt and black pepper.
Step 4.
Thinly slice the red onion and place it into a bowl with the lime juice. Season with salt, toss together and set aside to pickle.
Step 5.
Spoon the ricotta mixture evenly down the centre of each tortilla, then roll them up and place seam-side down into a small baking dish.
Step 6.
Pour the beef chilli over the top, spreading it to cover the enchiladas. Sprinkle over the remaining cheddar.
Step 7.
Bake for 20 mins until the cheese is melted, golden and everything is bubbling.
Step 8.
Spoon onto plates and serve with the pickled red onions and a wedge of lime.
