Step 1.
Make the Poached Chicken & Ginger Broth.
Step 2.
Cook the noodles following pack instructions. Drain and rinse under cold water until completely cool. Set aside.
Step 3.
Shred the chicken and set aside. Peel the carrots and julienne both them and the cucumber into matchsticks. Thinly slice the spring onions and roughly chop the coriander.
Step 4.
In a small bowl, whisk together the soy sauce, rice vinegar and chilli crisp. Taste and tweak with a pinch of salt if needed.
Step 5.
In a large bowl, toss the noodles with the dressing. Add the shredded chicken, carrots and cucumber. Give everything a gentle mix.
Step 6.
Top with spring onions, coriander and sesame seeds. Serve cold or at room temp.
