Step 1.
Make the Ancho Chilli Chicken Traybake.
Step 2.
Cut the leftover chicken into bite-sized pieces. If you prefer, warm the beans and veg in a saucepan or the microwave.
Step 3.
Slice the lettuce. Grate the cheddar. Peel and slice the avocado. Cut the lime into wedges.
Step 4.
Assemble the bowl with lettuce, the leftover chicken, beans and veg, cheddar, avocado and salsa. Finish with a big squeeze of lime juice.
