Batch Cook: Greek Tomato Rice Traybake

There's nothing better than a traybake. We've loaded this one up with plenty of Greek flavours and ingredients. It's perfect for meal prepping at the weekend.

Ingredients

Makes a six-portion batch recipe

For the Base:

4 Garlic Cloves
1 Onion
3 Peppers (we like a mix of red and yellow)
100g Olives
4 Tomatoes
4 Tbsp Tomato Purée
600ml Vegetable Stock
350g Basmati Rice
2 x 400g Tins of Butter Beans
1 Tbsp Dried Mint
Olive Oil
Salt
Black Pepper

For The Tomato & Olive Baked Rice With Tzatziki:

¼ Cucumber
100g Yoghurt
1 Garlic Clove
Small Handful of Fresh Mint, plus extra to serve (optional)
½ Lemon
260g Spinach

For The Cod with Tomatoey Baked Rice & Aioli:

2 Tbsp Plain Flour
2 Cod Fillets
Small Handful of Fresh Dill
2 Tbsp Mayonnaise
½ Lemon
2 Tbsp Capers

For The Tomato & Olive Brothy Rice with Pesto & Feta:

400g Tin of Cherry Tomatoes
300ml Vegetable Stock
2 Tbsp Green Pesto
40g Feta
