Whipped Feta and Garlicky Tomatoes

Step 1.

Put all of the whipped feta ingredients in a food processor with 3 tablespoons of olive oil and blend until smooth and creamy.

Step 2.

Heat your oven to 180°C.

Step 3.

Put all of the slow roasted tomatoes ingredients in an oven dish with 120ml olive oil. Roast for 30-45 mins.

Step 4.

Serve the hot tomatoes on top of the whipped feta with some crusty bread. I love the contrast of the hot juicy tomatoes and cool creamy feta.

Don’t throw away the oil that the tomatoes have been cooking in. It’s incredible in salad dressings!

Whipped Feta
200g Feta
4 Heaped Tbsp of Mascarpone (or Ricotta)
1 Tbsp Honey
1/4 Tsp Dried Oregano
Juice of 1/2 to 1 lemon
Zest of 1 Lemon
Olive Oil
Slow Roasted Tomatoes
500g Cherry Tomatoes
A Few Sprigs of Fresh Thyme
5 Cloves of Garlic
Olive Oil
