Step 1.
Preheat the oven to 200°C fan.
Step 2.
Add 5 tbsp of vegetable oil to a large, deep baking dish. Add the sausages and heat for 5 mins in the oven.
Step 3.
Weigh out and sift the flours through a sieve to make sure there are no lumps. In a large bowl, mix the flours, baking powder and a good pinch of salt.
Step 4.
Whisk the soy milk, mustard and extra virgin olive oil with 100ml of warm water in a jug.
Step 5.
Make a well in the centre of the dry ingredients before pouring in the soy milk mixture. Whisk it all together until you have a smooth batter. Let the batter rest whilst the sausages cook.
Step 6.
Remove the tray from the oven and pour over the batter, around the sausages.
Step 7.
Add in the rest of your cooked veggies.
Step 8.
Quickly place the tray back in the oven on the middle shelf for 30 mins, until golden on the crust and cooked through in the middle.
