The Ultimate Homemade Gazpacho

Step 1.

Prep time. Peel the cucumber, half it, scoop out the seeds and slice it up.

Step 2.

Remove the seeds from your red pepper and green pepper, and chop into chunks. Chop the garlic cloves into slices. Slice up 3 spring onions. Tear up a bread roll.

Step 3.

Throw all these ingredients into a large bowl along with your tomatoes. Add the sherry vinegar, 5 tbsp of olive oil and a generous sprinkle of salt and pepper.

Step 4.

Get your hands stuck in and crush everything into a pulp. Once it is broken down, get the blender involved.

Step 5.

Blend until smooth and ladle the gazpacho into a pouring jug.

Step 6.

Serve with lots of ice, a drizzle of good olive oil and a bit of pepper. Enjoy!
