    super tasty! did half the chickpeas and coconut milk and cooked the fish in the sauce for 10 minutes and served with rice. yum! The only Red Thai curry paste is Mae ploy 10/10 flavour and good spice

    the cod was nice however measurements for the sauce seem a bit off, feels/looks like a soup. texture with the chick peas and edamame I can’t say I enjoy (but perhaps that’s just me). lacking flavour definitely.

    Hi Lorna! Thanks for your honest feedback, this is more of a brothy recipe so if you'd like less sauce next time you could reduce the coconut milk. In terms of flavour not all curry pastes are created equal, make sure you go for an authentic Thai brand, or even better one from the world food aisle, these pack the most punch!     Hot but authentic tasting. I bought chunky cod loin and oven cooked as grill would not have cooked through. I used frozen edamame which worked fine. Quick and simple to make yet feels like a meal you spent hours over.

    This was delicious! I added slightly more red curry paste than the recipe and approx 2 tbsp of soy sauce but would very much recommend this recipe. I did eat it as more of a soup than a curry (but I love that!).

    Lacking flavour unfortunately, even after increasing all major flavour ingredients. Dish was also too liquid to be described as a curry.
