Step 1.
Before you begin, make the Sticky Soy, Ginger & Garlic Chicken Traybake batch recipe.
Step 2.
Pick the mint leaves and set aside. Slice the courgettes.
Step 3.
Heat the sesame oil in a frying pan over a medium heat and fry the courgettes with a pinch of salt for 5 mins until golden and tender.
Step 4.
Drain and rinse the butterbeans. Grate the garlic and stir through the courgettes for 1 min until fragrant. Tip in the butterbeans and cook for 2-3 mins until warmed through.
Step 5.
Meanwhile, reheat the Sticky Soy, Ginger & Garlic Chicken Traybake leftovers in a pan or microwave until hot and sticky. Slice into the chicken into strips.
Step 6.
Squeeze the juice of the lemon into the butterbeans and give it a good stir. Spoon the bean mix into bowls, top with chicken and green beans from the traybake, mint leaves and a nice dollop of sambal, if using.
