I wasn’t totally blown away by this dish although the next day as leftovers I did add to another dish. It needed longer cooking time and there’s not enough liquid so it was dried out even after turning it right down.

I enjoyed this - but I cooked on a lower temperature for less time and it still burnt. I agree with other comments about glazing towards the end of the cooking time. also would use a full aubergine per person rather than half next time. really tasty sauce though

Nice midweek meal but I think the temp is too high to cook the aubergines without burning the glaze. Next time I'd roast them without the glaze for 10-15 mins and then add it. Or add more water to stop it burning and reduce the temp to 180 as someone else suggested.

Absolutely delicious! I added some lime as well. Swapped out parsley with coriander, as that was what I had.

I have noticed that Mob love putting too much lemon in their recipes. Decided to follow this one just like it was written, and yeah, a bit too lemon-y for my taste. Apart from that it's great!

The glaze burnt on the aubergines in the oven so I wonder if the temperature should be 180 rather than 200. Nevertheless, the aubergines taste incredible. I served with bulgar wheat instead of rice to make it a little healthier.
