We took this to a pot luck and people loved it! It mixed well with the beautiful chaos that pot luck brings as well, nice and fresh. Ended up popping the asparagus in the air fryer, and using quinoa (shout out to learning you could cook quinoa in the microwave) so everything could come together quickly.

This was really good! We’re not vegan so I added chicken and ricotta salata, and an avocado I had laying around—will definitely be making again!

Loved this. Only thing I did differently was thinly slice the radishes with a mandolin as I just think that’s the best way to eat them. Cooked this for dinner with a herby frittata (also a mob recipe) and it was a lovely spring dinner! Was good for leftovers too. Thanks Ayala :)
