Spiced Aubergine & Lentil Stew Hummus Bowl
Loaded hummus is always a good idea, and this one goes the extra mile. A saucy, spiced aubergine and lentil stew blends into the creamy hummus below. It’s a full meal, packed with protein, fibre and flavour and is perfectly scoopable.

super tasty - felt like a large filling portion, might make a bit less next time.

Really yummy but the nutrition breakdown given for the recipe is wildly inaccurate. I followed everything except substituting in spray oil on the aubergine instead of brushing olive oil and still the fat and carb content was far higher on my version and the protein content far lower (almost half!). I’m not sure how you are calculating your nutrition but it’s way off!

soo good 😋had with sourdough bread. it works as a main meal and I think it could work well as a starter for guests to nibble on

THIS is an absolute smash, along with the mob Za’atar hummus recipe - will be remaking this again. I did add butter beans to this too which worked nicely!

Delicious! I’ve now made this multiple times. The aubergine and lentil stew mixture is also lovely on a buttered jacket potato with tahini. It also works well to double the mixture and pop some in the freezer for future.

The recipe is great but it would be super helpful to have more detailed instruction. Fill the tin with water? Should specify to add it, and when. It would also be helpful to specify what you should be cooking the onion in... had to switch from a skillet to a pot halfway through.

This is beyond yummy! I chucked in some courgettes as they were looking lonely in the fridge & some left over rice to bulk it out for the family - such a versatile recipe! easy peasy ,no faff & absolutely delish- this has to be what MOB is all about!

This is an absolute favourite. Used red lentils as had those to hand and normal chopped canned tomatoes instead of plum tomatoes and it is absolutely exquisite!

Very very delicious!! I added cinnamon too, and made a tabouleh to go with it. Also small tip...if you're making this as a weeknight tea rather than for a dinner party or something, I tend to keep the hummus separate and serve on the side so I can easily reheat the day after :-)

This recipe was absolutely delicious!! We used tinned green lentils, and cuts the Aubergine into cubes due to preference. But we loved this and will 100% keep making it! Thank you Mob!

I wanted to cook this as I had a pack of red lentils, tahini and harissa that were sitting around. Substituted puy lentils for red and added my harissa to the plum tomatoes and it came out beautifully. Would recommend 10/10
