Smoked Cheddar
Tuna Melts
Step 1.
Thinly slice the spring onions. Open the tins of tuna and drain off the water. Put the drained tuna meat and sliced spring onions in a bowl and add as much mayonnaise and hot sauce as you like. Season to taste with salt and black pepper and stir together.
Step 2.
Assembly time. Put four slices of sourdough bread onto a chopping board. Spread a thin layer of mayonnaise over each slice, then turn them mayo-side-down onto the board. Spoon the spicy tuna mayo evenly over each piece of bread, then grate the smoked Cheddar directly over the top of each one.
Step 3.
Top with the remaining bread slices and spread a thin layer of mayo on the top-facing side of each. (Having mayo on the outside of the bread is the answer to a super crisp toastie!)
Step 4.
Get two large frying pans, preferably non-stick, over a high heat. Fry the toasties for 1 minute on each side until golden, squashing them down with a fish slice or spatula as they cook for ultimate crispiness. Transfer to plates and serve.
