Sausage & Roasted Pepper Quesadillas with Parmesan Dip

Step 1.
1 Adult Serving = 2 Kids Servings
Peel and finely slice the red onions. Heat the olive oil in a large frying pan set over a medium heat. Add the onions and a pinch of salt and cook gently for 20 mins until really soft. Add the sugar, if using, and balsamic vinegar. Stir through and cook for a few more minutes until jammy, then take off the heat.
Step 2.
Meanwhile, make the dip.
Grate the parmesan add to a blender with the soured cream and a squeeze of lemon juice. Blitz until smooth, taste and season with salt and black pepper. Set aside.
Step 3.
Once the onions are softened, add the sugar, if using, and balsamic vinegar. Stir through and cook for a few more minutes until jammy, then remove from the pan and set aside (keeping the pan to cook your sausage meat).
Step 4.
Grind the fennel seeds in a pestle and mortar or spice grinder. If you don’t have one, leave them whole – no stress.
Squeeze the sausagemeat out of the skins into a bowl and mix with the ground fennel seeds.
Step 5.
Place your onion pan back over a medium-high heat and cook the sausage meat, breaking it up with a spoon, for 8-10 mins until golden and crispy. Set aside.
Step 6.
Drain and rinse the cannellini beans, then roughly chop the roasted peppers and basil. Chuck the beans, roasted peppers, crispy sausage and basil into a bowl and season with salt and black pepper.
Step 7.
Add a generous spoonful of the mixture onto one half of each tortilla. Top with a spoonful of the caramelised onions and a handful of mozzarella. Fold over to make a half-moon shape.
Step 8.
Heat a clean pan over a medium heat. Toast each quesadilla for 2-3 mins per side until golden and the cheese has melted. You can do this in batches or keep them warm in a low oven.
Step 9.
Serve up!
Kids Plate: Cut into small triangles and serve with the Parmesan dip on the side and some extra veggies, we've gone for cucumber.
Parents Plate: Cut into larger triangles and serve with the parmesan dip. If you're after extra heat add a sprinkle of chilli powder or your favourite hot sauce.
