I’m making this for the second or third time, I think it’s the pesto that makes it! I’ve found I’ve needed to use 2 400g tin of tomatoes (but could have used massive veg I suppose!), and when I haven’t been able to find smoked almonds I’ve used roasted salted ones and added smoked paprika to the pesto mix with great success!

Lovely! Followed advice from another review and cooked down onions, garlic and tomatoes before roasting (also added a pinch of chilli for an extra kick). Yum.

I was skeptical that the sauce would be interesting enough but the fresh herbs work really hard in this. Delicious and pretty low effort - will definitely make again.

Epic. Changes I made were I made was I sauteed shallot, garlic, chopped tomatoes first - reduced it a bit to thicken - mixed through veg, roasted it for a bit, cooked sausages so they browned, chopped them up, topped them onto the tomato sauce veg mix to finish. Almond pesto is YOM.
