Step 1.
Before you begin, make the Sausage Gochujang Ragú.
Step 2.
Bring a large pan of salted water to the boil and cook the linguine until just al dente. Reserve a ladle of pasta water before draining.
Step 3.
Grate the parmesan.
Step 4.
In a small frying pan, toast the panko breadcrumbs with a drizzle of olive oil and 1 tsp of the sesame seeds over a medium heat. Stir regularly for 3–4 mins until golden and nutty. Remove from the heat and stir through the grated parmesan.
Step 5.
Heat the Sausage Gochujang Ragù in a large frying pan over a low heat until warmed through.
Add the cooked pasta to the ragù along with a splash of the reserved pasta water. Toss until glossy and fully coated, adding more water if needed.
Step 6.
Divide between bowls and scatter over the sesame pangrattato. Finish with a drizzle of crispy chilli oil, a pinch of sesame seeds and lime wedges on the side, if you like.
