Who doesn’t love rocky road? A classic fridge cake with crushed biscuits, marshmallows, dried fruits and nuts, chocolate and anything else sweet you’ve got lying around. Perfect for using up leftover chocolate, biscuits and sweets.

Step 1.
Bash up your biscuits – the best way to do this is put them in a bowl and use the end of a rolling pin to break them into pieces. You want some irregular chunks. Roughly chop the nuts, crunchie bar, and the marshmallows if using big’uns.
Step 2.
Line a brownie tin or small roasting tin with baking paper. Break the chocolate into a medium saucepan, add the butter, golden syrup and a pinch of salt. Cook over a low-medium heat, stirring occasionally until melted.
Step 3.
Add in all of your other ingredients, stir to coat then scrape into your tin and smooth into a compact layer. Put into the fridge to set – at least 4 hours should do it. Once set, cut into 12 rectangles, and keep in the fridge for whenever a craving hits.
