Roast Chicken Sandwiches with Leftover Herby Mayo
Roughly chop the herbs and capers.
Grab a mixing bowl and add the mayonnaise, the chopped herbs and the capers. Add a big squeeze of lemon, season with salt and pepper and mix.
Cut your focaccia into sandwiches and toast the inside.
Slice up your leftover chicken into bite-sized chunks. Slice the cucumber and tomato, season with salt and pepper. Separate the lettuce leaves
Time to build. Start with the bottom slice of each focaccia, slather with the herby Hellmann’s, top with cucumber, chicken, tomato and lettuce. Add another dollop of the Hellmann’s, crown with the lid and give it a squish.
Slice them in half and get stuck in.
