what ever happens to the second half of the lemon juice? the recipe only says to squeeze in half of the juice.

I love this dish! Actually having it for dinner now. I couldn't grate the tomato's so finely chopped them and made a runnier egg, delicious!

Great thinking Felipe! Yes these will keep for 2-3 days in the fridge. We'd suggest storing the individual elements separately in the fridge and then toasting your bread fresh on the day. Here's our recipe for prep-ahead boiled eggs too: https://www.mob.co.uk/recipes/oozy-jammy-eggs
