Step 1.
Heat the ciabatta in a low oven, 120°C.
Step 2.
Finely slice the garlic cloves and the red chilli. Dry the prawns on kitchen paper and season with salt and black pepper.
Step 3.
Get a small saucepan over a medium heat. Pour in the olive oil and heat until just shimmering. You want the oil to be hot but not nuclear otherwise the garlic and chilli will burn.
Step 4.
Add the garlic and chilli. Fry for 1 min until sizzling, then add the prawns. Cook, stirring occasionally, for a further 2–3 mins until all the prawns have turned pink. Take the pan off the heat and stir in the smoked paprika.
Step 5.
Tip the prawns along with their oil into a serving bowl. Roughly chop the parsley and scatter over the top. Serve with the ciabatta for dunking.
