Step 1.
Lightly oil the chillies and chuck it into the air fryer, cook on the highest setting for 6-8 mins until charred and cooked through.
Step 2.
While the chillies roast in the air fryer, open the prawns and drain any liquid from the pack. Dry the prawns with kitchen paper and set aside.
Step 3.
Set up 3 medium-sized bowls. Add the flour to the first along with 2 tbsp Cajun seasoning. Crack the eggs into the next bowl and beat with a pinch of salt and 1 tbsp of water. Add the breadcrumbs to the final bowl and stir in 1 tbsp of olive oil. It will clump up to begin with, keep stirring to distribute the oil evenly.
Step 4.
Working in batches, pass the prawns through each of the bowls, an even dusting of seasoned flour, then through the egg mix. Let the excess drain away then toss through the breadcrumbs. Set the breaded prawns to one side. Repeat with the remaining prawns.
Step 5.
Remove the chillies from the air fryer and scrape off the charred skin. Remove the seeds and chop into a paste. Stir through the mayo with the zest of the lemon and season to taste.
Step 6.
Add the breaded prawns to the air fryer and cook on high for 8 mins until golden brown and crispy. Toss with salt and a little extra cajun seasoning. Serve with the spicy mayo and cut the lemon into wedges for squeezing.
