Lovely! Overcooked my rice/quinoa mix a bit but taste is still amazing. I'd never have thought to cook tofu like this but it's smart because it greatly increases the surface area for sauce. I used sriracha smoked tofu. I've never tried peri peri sauce before to cook with (though I love Portuguese food), super good and spicy and with the lemon it just set it off! Added some peri peri marinated shrimps for extra protein.

the marinade was sweet and spicy which went perfectly with the smoked tofu, so so yummy and really easy to make
