Pepperoni Pizza Pasta
Finely chop the shallots and garlic.
Add a big glug of oil to a frying pan and add in the pepperoni. Cook for 5 min until very crispy. Set aside the crispy pepperoni on a paper towel.
Roughly chop the crispy pepperoni.
Add your chopped shallots and cook for another 5 mins. Then add in the garlic and cook for 1 min until fragrant.
Add in the chopped tomatoes, oregano and half of your crispy pepperoni. Cook for 15 mins until the sauce has thickened.
Pop your spaghetti to cook in some salted boiling water.
Tear up the mozzarella and basil.
Once the sauce is thickened and your pasta is al dente, add the spaghetti to the pan along with 150ml pasta water and toss together until the pasta is well-coated.
Stir in the torn mozzarella and basil, and mix until the cheese is slightly melted.
Serve with a sprinkling of parmesan cheese and enjoy.
