Plant-Based Mince & Peanut Butter Udon

Step 1.

Start with the peanut butter sauce. Into a bowl add your peanut butter, chilli oil, soy sauce and 2 tbsp of warm water, mix together until smooth.

Step 2.

Into an oiled wok, crumble the mince and add a pinch of salt, a grinding of pepper and your five spice. Mix and break up the Meatless Farm Mince with a wooden spoon. Halve your broccoli and add to the wok once the mince is crispy and stir.

Step 3.

Whack in your noodles to the wok and toss together. Next, spoon in your peanut butter sauce, slice up your spring onion (saving one for garnish) and add to the wok. Fold everything together.

Step 4.

Serve with a drizzle of chilli oil, and a sprinkling of your remaining spring onion and tuck into this delicious dish. Enjoy!

Add an extra tsp of chilli oil if you can take the heat.

500g Udon Noodles

200g Tender-Stem Broccoli
