Really light fresh tasting soup. For winter I might add in more leeks and another potato.
I don’t like goat’s cheese so swapped for cheddar which worked for me.
Younger family members enjoyed it with toasted cheddar fingers. . It’s been renamed ‘Shrek Soup’ . … sorry Sophie!
