Tomatoes, on tomatoes, on tomatoes...this one-pot couscous is tangy, nutty and loaded with savoury depth. A real umami bomb that's super speedy.

I really enjoy the texture the nuts bring to the dish and the cold tomatoes on top, how they mix with the warmth of the dish is excellent. I added a few things. It started with frying shallots first, then I realised I had a courgette to use so that went in finely chopped. At this point I thought it'd need some more liquid, so I added a can of tinned tomatoes and let it cook down until it was quite thick (with the sun-dried tomatoes and tomato paste in). Bit of paprika and oregano, then everything else this says. My lentils were a pack of merchant gourmet so they were easily put in towards the end. I also borrowed other tips from the comments such as chicken stock instead of water and the burrata on top .. soooo good 😊 ah and a bit of basil

I just got back from vacation, and I've been trying to find healthy recipes to reset. And oh boy... The nut drizzle was so interesting. I couldn't figure out whether I liked it or not for the longest time (I did). It was my first time using caraway seeds and I was pleasantly surprised. The recipe was super simple and delicious. I didn't use sunflower seeds and I added veggie broth based on the comments below. I'll definetely remake this as it brought a lot of comfort, and it was quick to make.

this freaking slapped. we mistakenly fried the chopped sundried tomatoes at step 2 but it made it even tastier

Super tasty! Used chicken stock instead of water for extra flavour, definitely worth splashing out on the more expensive tomatoes for this too! Also definitely don’t skip the nut drizzle, it adds a lot!

delicious! though i feel like it was missing some umami, so next time will try using veggie stock instead of just water & maybe frying the sun dried tomato with some garlic & onion

What measure of tomato are you supposed to use?

I’m about to make this and just noticed the same mistake lol. it doesn’t look like it totally matters because it’s more of a topping. I’ll probably use about 10 oz (250 g) of cherry tomatoes.
