Step 1.
Heat the oven to 220°C. Take the chicken out of the fridge about 30 mins before roasting – it cooks more evenly that way.
Step 2.
Halve the lemon. Crush the garlic cloves with the flat side of a knife, leaving the skins on. Stuff the chicken cavity with the lemon halves, garlic and thyme.
Step 3.
Drizzle the chicken all over with olive oil. Get stuck in and rub it in properly. Season generously with salt and black pepper.
Step 4.
Pop the chicken breast-side up in a roasting tray. Roast for about 50 mins–1 hr, or until the juices run clear when you pierce the thickest part of the thigh.
For this recipe used a 1.5kg-2kg chicken, adjust the timings for a smaller or larger bird.
Step 5.
Let it rest for at least 15 mins before carving – it’ll be much juicier, promise.
