I didn’t think I’d like this as much as I did - it’s decadent and delicious, the mushrooms adding a beautiful flavour that really gives it a creamy, rich feeling. I used a good quality salted dairy butter as I am not vegan, and it really made the dish. I used light coconut milk which was fine and still silky and satisfying. Others mentioned too much sauce but you can just simmer it down a bit before adding the tofu and mushrooms for a thicker less saucy consistency. Mine came out a good balance. I halved button mushrooms and this was perfect size.

This is now becoming my favourite curry and I'm not vegetarian. I prefer to use oyster mushrooms for the texture.

I found similar with the portion sizes. I used the app and set the quantity to 4 portions, but there was definitely enough for 5 with just rice, 6 if serving with rice and roti.
