Mushroom & Cheddar Super Toastie

Step 1.

Cut mushrooms into slices. Add to a pan with a knob of butter. Fry until deep brown.

Step 2.

Add a tbsp of butter into the pan. Add a small handful of thyme leaves, rosemary leaves, crushed garlic clove and a tsp of chilli flakes. Mix everything together.

Step 3.

Cook until the mushrooms are very dark and caramelised. Remove them from the pan. Leave the pan on the hob with the heat off. You’re going to use it in a bit.

Step 4.

Slice up your sourdough so you have 8 big slices. Spread butter onto 4 of them. Grate a thick layer of cheddar onto each slice. Add your mushrooms. Grate over another layer of cheese. Butter your remaining 4 slices and place them on top of the sandwiches.

Step 5.

Add a tbsp of butter to your mushroom pan. Once melted, add in your sandwiches. Give them a press. Cook for 4 minutes.

Step 6.

Remove the toastie and add some more butter to the pan. Cook the other side of the toastie for another 4 minutes.

Step 7.

Once the toasties are golden brown and crunchy on the outside, remove from the heat, chop them up and tuck in!

Make sure you cook the toasties in the pan until they are deep brown and crunchy.

6 Tbsp Salted Butter
Loaf of Sourdough
320g Mature Cheddar
300g Flat Mushrooms
