This is a really lovely simple meal! I upped the portion size to 2 eggs per person which meant a bit of experimenting with the cooking time. I used veg stock instead of dashi and rice wine vinegar in place of mirin but I’m looking forward to trying it with the intended ingredients. Definitely putting this into the weekly rotation!
