Super simple, and super satisfying. This leek and potato soup is a classic for me. Finished with a savoury granola, it doesn't get tastier than this.

I’m a love of leek & potato soup so I’m tried my fair share of recipes. This one is nice and a healthier alternative to a heavy loaded cream recipe. The roasted leek makes a nice touch as does the crumbly topping. The flavours work well. I did omit the preserved lemon based on a previous comment & I couldn’t imagine the flavour combo plus they’re an expensive ingredient to add to find you don’t like them. The recipe was a little more effort than most soups but I used my air fryer instead of the oven which worked perfectly 👌🏻
I also only used 1L of stock and this was more than enough! If I’d have used 1.5L it would have been extremely thin. It’s not a thick soup even with only using 1L.

An amazing soup that I would definitely make again, but really didn’t enjoy the preserved lemons, they didn’t seem to go with the rest of the flavours.

Totally misread the roasting leeks bit and roasted all of them 🤦🏼♀️ but easily rescued and tastes so comforting!
