Made some slight alterations as been reading the reviews. I made this dish for 2 people, so only used 200g pasta but didn’t alter the amount of the other ingredients and added 30g Parmigiano cheese. Fried up some broccoli and courgettes to have with it and toasted some walnuts to go over the top. It was very yummy and super filling

Perfect even for stale dry kale like the kind I found forgotten in the fridge. Plopped a ball of burrata on top CUZ I CAN and went straight to heaven.

Really nice.
Added asparagus for some texture / crunch.
Make sure you add enough salt.

Delicious recipe. I added more lemon and garlic to the pesto, and a little bit of lemon, black pepper & parmesan into the ricotta. Easy mid week meal.
