Tacos de carne asada, or juicy steak tacos with refried beans and all the classic toppings. This recipe uses leftover refried beans and red salsa from my other recipes. These tacos are very popular in the North of Mexico, where taquerias sell their own secret recipes with lots of different toppings. If I had to choose, they’re probably my favourite taco recipe.

Step 1.
Season the steak with the garlic salt and a pinch of black pepper.
Step 2.
To prep the toppings, dice the onion and coriander and cut ¾ of lime into wedges. Pop them in bowls or on a plate, but keep them separate. Get the spicy salsa in a bowl.
Step 3.
Heat the sunflower oil in a skillet set over high heat. Add the steak and fry it for 3 mins on either side (this will give you a medium steak; cook it for more or less time if you prefer).
Step 4.
While the steak is frying, gently heat the refried beans in a saucepan set over a medium heat until warmed through.
Step 5.
Mash the avocados in a bowl and season with salt and squeeze in the remaining limes (the lime juice will stop the avocado turning brown).
Step 6.
When the steak is cooked, remove it from the skillet and let it rest for 5-10 mins.
Step 7.
Wipe out the steak pan (make sure it's really dry) then set it over a medium-high heat. Add the corn tortillas, one at a time, and heat for 15-30 secs on each side. Wrap them in a tea towel to keep warm.
Step 8.
Place everything on the table and let everyone help themselves to build their own steak tacos!
