    Wow, this is absolutely gorgeous! i swapped kale for spinach as I'm just not a fan of kale, and I didn't use a litre of stock for x4 serving as I think it would have been too watery. Very easy recipe once your veg is chopped. Cannot wait to have this for my lunches at work this week!

    pretty good. good do with a bit more of a ginger kick. anyone got a tip for easy peeling of butternut squash?? but got 6 portions out of it. but will add a side of protein and veg when I serve.

    Hey Poppy! Feel free to add more ginger if you'd like a little more warmth. Peeling butternut squash isn't the easiest, it's important to make sure you use a sharp Y-shaped peeler, then slice off the top and bottom so the squash stands flat. Cut it in half at the “neck” where it bulges, and peel the long neck and the round bulb separately, much safer and quicker! Hope that helps!

    Delish! I made mine with pumpkin instead of butternut but otherwise followed the recipe exactly and it was perfect! Such a warm and comforting meal 🍽️ also served mine with a dollop of yogurt and some thinly sliced pork sirloin instead of bread

    I added in the lentils when i added the butternut squash and carrots as I know they take longer than 10 mins. Nice and easy to make though.

    This is so delicious. I doused the kale in olive oil and salt and put it in the oven to crisp up and sprinkled on the top rather than adding to the pan. Really yummy addition with texture too!

    First time making, and it has served us (a couple) for three meals. First was with sourdough; second with monkfish (OMG!); third with salmon. A brilliant, wholesome winter warmer. Oh, and we used a bag of Kale (200g) to save the hassle of having any leftover that we'd likely end up composting

    Absolutely delicious and worked as the perfect winter warmer! I used my homegrown pumpkin instead of butternut squash, and used my homemade sourdough and it worked great. Will definitely be adding this to our regular recipes. ❤️

    STUNNING! this requires quite a bit of chopping and patience but it’s so worth it - I served with some steamed fish for extra protein but prawns would also work really well!
