I skimmed the recipe so accidentally roasted the carrots in the harissa/honey mixed (added some oil and salt when I realized) but it still turned out well. I would increase the amount of carrots next time as it’s a bit topping lite. Also roasted the chickpeas in with some oil, paprika, cumin and salt, added garlic to the yoghurt/feta mix to make aioli-esque and made the cous cous with veg stock. next time tempted to add halloumi

I omitted the honey as I find roasted carrots sweet enough. Also added some quinoa. Really great cold lunch 👏🏼

Delicious, especially those honey-harissa chickpeas! The carrots were sweet and flavourful and the feta-yogurt dressing was very tasty too. I personally didn't feel the olives went so well with the other ingredients so I'll probably leave them out next time but will definitely be making this again!
