Myself and my teenage children thought this dish was absolutely delicious. I did substitute the scotch bonnet chilli with a sprinkling of chilli flakes. Also, I microwaved the chopped sweet potato until starting to get soft before putting it in the oven with the chicken on top. That way the sweet potato was nice and soft and caramelised around the edges after the 45 mins. Will definitely cook this again 😊

This was fine? Salt and pepper does not suffice for the chicken, definitely add more seasoning (cumin, paprika, garlic salt). Season the sweet potatoes as well. I’m gonna do that next time to elevate it cos this ended up being a bit meh.

I’ve made this, and can confirm it is delicious. It’s super easy to make, you probably have most of the ingredients in anyway. Perfect for cold evenings! Saw this on Instagram and learnt the OG version is with okra - will be making that next!
