Halloumi & Cauliflower Hash Brown Bake with Walnut Salsa
Heat your oven to 200°C.
Place your Strong Roots Cauliflower Hash Browns on a baking tray and bake according to package instructions.
Place your tomatoes on a separate tray, drizzle with a little olive oil, chilli flakes, salt and pepper. Put this in the oven at the same time as the Cauliflower Hash Browns.
Toast your walnuts in a dry frying pan until fragrant.
Finely chop your walnuts, parsley and capers. Add your lemon zest and juice, along with a pinch of salt. Mix with just enough olive oil to bring together as a salsa.
Slice your halloumi into small pieces and add to another tray.
When the hash browns and tomatoes are cooked, heat your grill to high and pop the halloumi in until golden brown. Watch your halloumi carefully – once all the pieces are looking golden, remove the tray from the oven and give them a flip. Return the tray under the grill to cook the other side.
Assemble a plate with all of your ingredients and then spoon your salsa over the top before serving
