Grilled Peach Sally

Step 1.

Cut and pit your peaches whilst you heat up a griddle pan.

Step 2.

Add your peaches and cook until nice and charred. Remove from the pan.

Step 3.

Add sliced Halloumi, cook until charred.

Step 4.

Crush your hazelnuts. Add hazelnuts and flaked almonds to a pan until lightly toasted. Add honey to the pan along with a generous handful of thyme. Cook for a minute more.

Step 5.

Finely chop your celery and your green apples.

Step 6.

Dressing time. Mix a cup of olive oil, Dijon, a pinch of salt, the juice of half a lemon and a good grinding of pepper.

Step 7.

Chop up your lettuce, assemble all the ingredients and pour over your dressing. Mix and enjoy!

Make sure you leave the peach on the griddle pan face side down so it chars.

100g Hazelnuts
1 Lemon
Bunch of Thyme
100g Flaked Almond
3 Celery Sticks
2 Green Apples
1 Iceberg Lettuce
2 Tsp Honey
2 Tsp Dijon Mustard
Olive Oil
