My partner really liked it but it was our least favourite out of the two different mob recipes for lunch we prepped. I think that if you quite like sweet flavours and you quite like peanut butter then this will be really lovely dish for you. However, I thought that the kimchi would bring it back with some more sourness and unfortunately it just wasn't right balanced in my taste buds, but I'm sure it would work for other people that prefer sweeter flavours.
I'll admit I couldn't be bothered to puree the garlic so I didn't do that part and just made a garlic rice and added whole spinach in. Maybe that was the difference that would have meant I liked it more??
Still definitely filled me up though and I really enjoyed making it. I also added kimchi on the side... because why not?

This meal was next level good! The flavours were spot on. I had leftover rice that I needed to use up, so I just sautéed the spinach and garlic and then folded it through the warmed up rice. I also added some kimchi to the bowl and topped with some homemade red pickled onions that I made. I will definitely be making this again. Was ready to eat in 30-35 mins. Thanks so much for this recipe.
