This has become a family favourite. I add courgettes to bulk out the veg a little and use halloumi instead of feta, but other than that stay faithful to the recipe. I crave this recipe now when it’s not on the menu!

Hi Victoria - this one is designed to be made in the oven so that the feta gets nice and charred and the gnocchi gets a bit crispy! Making it on the hob will mean that the textures are a bit different, so you might be better off making something like our vegan one-pan chorizo gnocchi for now, and saving this one for when you've got an oven again!

Bloomin gorgeous! Big flavours. Will definitely make again. Took a bit longer than recipe suggested for gnocchi to crisp up. Served with tzatziki as suggested by another reviwer

we loved this recipe. I added chicken thighs when roasting the veg and they were delicious. Next time I would do a little less feta and maybe add some carrots. The pickled onions and mint to garnish really finish the recipe off.

love this recipe 😋 I have made it twice and it freezes really well. First time I didn't have aubergine so I substituted with courgette. will be a regular addition to my meal plan.

Hey Grainne! Yes make sure you let the dish cool down before popping in the freezer. It will last for up to 3 months :)

I added some agave to the harissa/oil/lemon/garlic mixture to balance the lemon a bit and it is addicting! I followed other reviewers’ advice and also roasted the onion with the other veg. We additionally used up our fall harvest and roasted zucchini (courgette), eggplant (aubergine), summer squash. I used jarred castelvetrano olives and did not used the canned lentils, as they weren’t available at the store. This was so delicious and incredible!

love this recipe, simple and flavourful and I often throw in any vegetables i have in the back of the fridge :) i also put the onions in the oven rather than pickled which is really nice too. never used to like gnocchi much until this recipe, love when they get a bit crispy at the end!

Loved this recipe! So easy to make - got the veggies in the oven first then made the sauce and onions. Added loads of lemon and harissa for us and was an absolute flavour bomb! Definitely making again. thanks mob!

Delish. didn’t pickle the onions - chucked them in at the same time as the gnocchi and it was lovely. topped with some fresh basil at the end. Nice and filling, quick and tasty.
