Finely slice the garlic and the peppers.

Finely slice the peppers and add to a baking tray, drizzle with oil and season with salt. Put in an oven at 200°C for 40 mins, mixing halfway. Once soft, add to a blender. Heat oil in a pan over a medium heat and fry the garlic for 3 mins, until golden, then add to the peppers – blitz until you have a smooth paste. Taste and season with salt and pepper, then transfer back into the garlic pan.

Grate the Parmesan and get the pasta to boil, before draining. Save the pasta water!

Tip the cooked pasta into the sauce pan directly, along with the Parmesan, chilli flakes, sherry vinegar and a big slosh of cooking water. Plate up and top with some more chilli flakes and Parmesan.
