Step 1.
Peel and quarter the onion. Finely grate the garlic.
Step 2.
Set a medium saucepan over a medium heat and add the butter. Once melted, stir in the gochujang and garlic. Cook for 2–3 mins until it darkens and smells fragrant.
Step 3.
Stir in the chopped tomatoes and onion. Bring to the boil, then reduce the heat to medium-low. Pop a lid on and simmer for 20–30 mins until the onion has softened. Then, take the lid off and simmer for another 5–10 mins until the sauce has thickened to your liking. Season well with salt and black pepper.
Step 4.
Pour the sauce into a clean, heatproof jar and seal tightly. Let it cool fully before storing.
If the jar is sealed, store at room temperature for up to 1 month. If unsealed, store in the fridge and use within 2 weeks.
