Step 1.
Before you begin, make the Sausage Gochujang Ragú batch recipe.
Step 2.
Slice the spring onions into fine matchsticks. Cut the broccoli in half.
Step 3.
Bring a large saucepan of salted water to the boil. Add the broccoli and egg noodles and cook for 4–5 mins until the noodles are tender and the broccoli is bright green and tender. Reserve a ladle of cooking water, then drain.
Step 4.
Heat a generous drizzle of olive oil in a frying pan over a low-medium heat. Add the spring onions and fry gently for 5–7 mins until golden and crispy. Transfer to a plate lined with kitchen paper and set aside.
Step 5.
Return the drained noodles and broccoli to the saucepan. Add the gochujang sausage ragù and set over a low heat. Toss everything together, adding splashes of the reserved noodle water until the sauce is glossy and coats the noodles.
Step 6.
Dish up into bowls and finish with a heap of crispy spring onions on top.
