Gnocchi with Smashed Peas, Lemon & Parmesan
This is my smashed pea gnocchi. It's a stunner of a summer dish and dead simple. You can use fresh peas if you like, but frozen really are the best. B x

I had a big Scottish brunch and decided to meal prep for the week ahead with 4 portions. After a forkful I decided to have a portion for dinner and went back for a second, third a fourth serving … it’s tasty and what I can only imagine as like having a crack cocaine addiction. yum.

This was delish. We wolfed it down last night. Enjoyed by the whole family, made by my husband that likes to use 7 bowls per ingredient so even with managing excessive bowls and utensils is was a 30 mins in full job 😍

you need a drop of water to blend the frozen peas & the portions are very small

Agreed. My husband did this, then used extra parmesan to thicken it up 😆

Delicious quick meal! Had some regular pasta to use up instead of gnocchi which still worked really well - save lots of pasta water if doing so to keep the sauce from drying up!

I was a little skeptical about whether this one would be super flavoursome but I was so wrong!!! This was amazing!!! I used broccoli instead of asparagus and I had no issues browning the gnocchi. Will definitely be making it again!

absolutely delicious! I added some sun dried tomatoes and it was the perfect touch, can’t wait to make this again - gonna try swapping out Parmesan for cheddar to save on the next food shop!

Delicious, but we struggled to brown the gnocchi. it just created a starchy layer on the bottom of the pan. Any suggestions Mob for how to prevent this? Flavour was bang on and I agree with another commenter that it’s great with some extra chicken for more protein

i had the same thing, ended up transferring it to a new pan and it took quite long but it browned nicely without the starchy bottom!!

I had the same! Delicious flavour but I had a sticky mess at the bottom of the pan too...

I was going to try this later but I think I'll cook the gnocchi in the air fryer as that gets it nice and browned & crispy, I'll probably cook the sauce without and add it at the end - will let you know!

really delicious, I added a jar of bold butter beans with their liquid and skipped the starch water from the gnocchi, helped bulk out the meal and add some fiber - will repeat this!
