Gnocchi with Smashed Peas, Lemon & Parmesan
This is my smashed pea gnocchi. It's a stunner of a summer dish and dead simple. You can use fresh peas if you like, but frozen really are the best. B x

This is now a regular on our lunch menu. Name me a better carbohydrate than gnocchi. You can’t.

So I used sour cream, cotija cheese, rigatoni, and lime instead of parmasean, crème freshe, gnocchi, and lemon (I live in SW US), and hate store bought gnocchi). I think you could also use Mexican crema. the measurements and directions were all spot on. still ended up super tasty! I zested the lime in while the peas while blanching. 4 servings was really more like 3 and a snack, so I’d bump everything up by 1/4. this is a great sauce base.

I doubled the peas and asparagus, and it just about made three portions. delicious though!

one of our favourites, often substitute the asparagus with broccoli or other greens we have. a bit of mint works well with the peas too

I had a big Scottish brunch and decided to meal prep for the week ahead with 4 portions. After a forkful I decided to have a portion for dinner and went back for a second, third a fourth serving … it’s tasty and what I can only imagine as like having a crack cocaine addiction. yum.

This was delish. We wolfed it down last night. Enjoyed by the whole family, made by my husband that likes to use 7 bowls per ingredient so even with managing excessive bowls and utensils is was a 30 mins in full job 😍

you need a drop of water to blend the frozen peas & the portions are very small

Agreed. My husband did this, then used extra parmesan to thicken it up 😆

Delicious quick meal! Had some regular pasta to use up instead of gnocchi which still worked really well - save lots of pasta water if doing so to keep the sauce from drying up!

I was a little skeptical about whether this one would be super flavoursome but I was so wrong!!! This was amazing!!! I used broccoli instead of asparagus and I had no issues browning the gnocchi. Will definitely be making it again!
